A delicious way to start your day!


  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup melted butter
  • 1 cup fresh blueberries

Sift together the flour, sugar, baking powder, baking soda, and salt in a large bowl

In a separate bow, beat the eggs with the buttermilk and melted butter.
Combine the wet an dry ingredients. Gently stir into a lumpy batter. Do not over mix, batter should be lumpy. If batter is over mixed, you will get heavy flat pancakes.

Let Batter sit for 1-2 minutes.

While batter is sitting, heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.

Serve with maple syrup.
